Abstract

Halal poultry meat assurance is essential for Muslim consumers and requires compliance with Islamic slaughtering standards. Under Shafi'i jurisprudence, valid slaughter requires complete severance of the hulqūm (trachea) and marī' (esophagus). However, compliance with these anatomical requirements remains a concern across traditional markets, slaughterhouses, and modern retail outlets. This study evaluates slaughter compliance in Tangerang Regency and identifies factors associated with incomplete severance. A quantitative descriptive field evaluation examined 1,138 chicken head samples weighing 126.6 kg, collected from 15 sub-districts between June 16 and July 11, 2026. Of these, 943 samples (82.86%) met the required criteria, while 195 (17.14%) were classified as invalid. Contributing factors included limited jurisprudential knowledge, dull knives, high slaughtering pace, and inadequate supervision and standard operating procedure enforcement. This study provides field-based anatomical evidence of compliance with Shafi'i slaughtering requirements in Tangerang Regency. The findings highlight the need for continuous education, certified halal slaughterer training, proper knife maintenance, standardized procedures, and periodic supervision to strengthen halal assurance and protect Muslim consumers.

Highlights:

  • Examination of 1,138 samples identified 195 cases of incomplete severance of the required neck channels.

  • Four operational factors were identified: limited fiqh knowledge, dull knives, high slaughtering pace, and inadequate supervision.

  • Continuous education, certified training, standardized procedures, and periodic oversight were recommended to support compliance.
